Arties is a small area that belongs to the municipality of the Alto (High) Arán. Its geographical location is the highest zone of the province is translated into the existence of a gastronomy from a mountain region, where the lifestyles are conditioned by the weather and some traditional activities such as the ranching and the agriculture are very important.
This is a region where soups, stews and hotpots are common. Between the most representative dishes when eating in Arties, the Olla Aranesa is probably one of the most popular. It is a stew made of legumes, vegetables and meat, thought to resist the hard weather of the region during the winter.
Regarding the meats, it is usual to eat the products that come from the lamb and cow ranching. The duck, an influence that comes from the other side of the frontier, has its own gastronomic journey in many municipalities of the valley during the autumn months. The forests from the surroundings of Arties are full of mushrooms and all kinds of berries such as strawberries, raspberries and blackberries. The pasteres are the crepe version from Aranes, one of the most famous desserts of the region.
