Founded in medieval times, this city was built around a group of significant salt mines which give the town its name. In addition to this geological feature of vital importance to the area, in the 17th century Leintz Gatzaga contributed to the construction of the Camino Real (Royal Road) that connected the coast of Guipuzcoa to the inland Iberian Peninsula, another factor that contributed to the town’s great prosperity.

This small town is located in the comarca of Debagoiena in the province of Guipuzcoa on the border of Álava. Known for its salt mining, which was the town’s main industry for centuries, Leintz Gatzaga’s kitchens set the standard for traditional Basque cuisine. Meat is one of their specialties, so you’ll find a lot of ox chops, barbecued goat, and other seasonal dishes in the town’s restaurants. Due to its proximity to the coast, you’ll be able to get fresh seafood baked, grilled, or as part of classic stews like marmitako and hake in green sauce.
