Remojón of orange and cod recipe is a typical dish in Granada. They have a wide variety of dishes that will surprise you, rooted in their amazing history (including Jewish and Muslim traces). Remojón achieves to perfectly combine fruit and fish. We will use Monte de Granada olive oil to make our recipe unique. Let’s get started!
Ingredients for the cod and orange soaking recipe
600 gr desalted cod
2 spring onions
1 garlic clove
100 gr pitted black olives
3 hard boiled eggs
You need to desalt the cod. To do so, put it into a cold water bowl and let it cool in the firdge. You must change the water every 12 hours, and repeat this action twice again. However, it is easier to buy the cod already desalted.
Once the cod is desalted, add olive oil and the garlic clove into a frying pan, then add the strained cod. Let is cook for 10-15 minutes (depending on the cod’s thickness).
Let it cool and cut it into pieces. Set it aside.
Now boil the eggs.
While the eggs are boiling, peel the oranges and try to remove the white part out of the orange. Cut the oranges into slices and the egg.
Cut the onion into pieces.
It is time to make the salad. So, add the ingredients in this order: oranges, onion, cod, olives and eggs. It is not compulsory to add the ingredients in this order but it will be easier to taste all the flavors later in this way.
Mix the vinegar and olive oil in a different container so that it gets well mixed. Do not include salt because the cod will be salty enough even though you have desalted.
Finally, garnish this salad with the dressing and serve it.
