The recipe for paparajotes (a dessert made with lemon leaves and coated in dough) is an excellent dessert from Murcia. Ingredients for the Paparajotes Recipe:
500 grams of flour
100 grams of sugar
1/2 liter of milk
Yeast (1/2 packet)
Sugar icing and cinnamon powder to sprinkle
A pinch of salt
How to Make It:
In a bowl, beat the eggs, milk, sugar, the yeast, and grated lemon. Season it.
When it is well mixed, we will gradually add the flour to get a dough that is not super thick, but consistent enough to adhere to the leaves.
Wash the leaves and dry them with a cloth. Immerse the lemon leaves in the dough until they are completely battered on both sides.
In a frying pan, we add the oil. When it is hot, place each leaf with dough into the pan. To make sure both sides are browned, we will turn it over carefully or add a large amount of oil.
When it is browned, take it out of the pan and place it on absorbent paper to remove excess oil.
Finally, sprinkle a mixture of sugar icing and cinnamon powder on both sides.
